It captures the fresh, verdant and floral notes characteristic of its terroir, while the afternoon harvest and meticulous processing bring forward a deeper layer of ripe fruit and warm sweetness. Elegantly balanced and richly nuanced, it unfolds in successive layers, offering a refined and memorable experience in both aroma and flavour. Gan De is one of Anxi’s best known high mountain tea regions. Its distinctive character sets it apart from other famous areas of Anxi, such as Xiping and Xianghua. Located in the mountainous western part of Anxi, Gan De’s tea gardens are typically situated at elevations between 600 and 1,000 meters, with some plantations reaching even higher. The terrain is steep, the air is humid, mist is a frequent presence, and the warm days are balanced by relatively cool nights, conditions that favor the slow development of aromatic compounds in the tea leaves. Since the early 2000s, Gan De has become particularly renowned for embracing the modern, lightly oxidized jade Tieguanyin style. The guiding principle behind this approach is to preserve the tea’s purest and most intensely floral aromas. As a result, tea makers pay meticulous attention to temperature control throughout processing and take great care to maintain the freshness of the leaves, producing teas celebrated for their vibrant fragrance and elegant, floral profile. Tea leaves harvested in the afternoon, between 12:00 and 3:00 p.m., are less turgid and contain less surface moisture, making them better suited to rolling and subsequent oxidation. The result is a tea with tighter, more fully rolled leaves, a higher degree of oxidation, greater sweetness, and an intensely fruity aroma. Afternoon-harvested tea generally exhibits a deeper, more layered character. Tie Guan Yin is the most famous, premium-grade, turquoise-green Chinese oolong tea. According to legends, a leader named Wang discovered the original bushes in the Xiping district, Fujian, near the Guanyin rock. The tea was named Guanyin-tea after its first discovery site.
