The Xinghua tea region is a high-mountain area with a cool, misty climate, providing ideal conditions for growing exceptional oolong tea. Produced in the modern style, this tea is rich in amino acids, resulting in remarkable sweetness and a smooth, elegant character. Its flavor profile is fresh, sweet, and floral, with a silky mouthfeel and a long, lingering aftertaste. Morning-picked tea leaves are thick, moist, and full of tension, making them more difficult to process. Because of this, the leaves are shaken and oxidized more gently to avoid over-processing. As a result, they retain a greener appearance, a fresher character, and an exceptionally fragrant aroma. Tie Guan Yin is the most famous, premium-grade, turquoise-green Chinese oolong tea. According to legends, a leader named Wang discovered the original bushes in the Xiping district, Fujian, near the Guanyin rock. The tea was named Guanyin-tea after its first discovery site.
